The numbers that matter

Covers plate ribs and chuck short ribs.

Safe minimum from the USDA FSIS Safe Minimum Internal Temperature Chart. The pull window and rest are long-standing barbecue convention, not a published standard, and we present them as that.

Why 200°F and not 145°F

Beef short ribs is safe at 145°F. It is not good there. The cuts worth smoking low and slow are full of connective tissue, and that collagen only breaks down into gelatin with time at high internal temperatures. Pull at the safe minimum and you get meat that is cooked and chewy.

The extra 55°F or more is entirely about texture. That is also why the window is a range rather than a number: two cuts can finish anywhere inside it, and the feel of the probe tells you which.

On the way there it will stall, usually somewhere between 150 and 170°F, as evaporation cools the surface about as fast as the smoker heats it. Why the stall happens and what wrapping changes.

How to tell it is done

Plate ribs carry a lot of fat and forgive a higher pull temperature than brisket does.

Where to probe. In the centre of the meat between bones, without touching bone. Like brisket, short ribs are done when a probe slides in with no resistance.

A dome thermometer reads the air under the lid, not the meat. To hit a 10°F window you need a probe in the meat itself — how the budget and premium instant-reads compare.

Common questions

What internal temperature is beef short ribs done at?
Most cooks pull beef short ribs between 200 and 210°F. That window is barbecue convention, not a published standard, and the probe sliding in without resistance is a better signal than any single number inside it.
Is beef short ribs safe to eat at 145°F?
145°F is USDA's safe minimum internal temperature for this meat, so it is safe there. It will not be tender: the connective tissue that makes beef short ribs worth smoking has not rendered yet, which is why the target sits 55°F or more higher.
At what temperature does beef short ribs stall?
Usually somewhere between 150 and 170°F, where evaporation from the surface cools the meat about as fast as the smoker heats it. It can hold there for hours. Wrapping in butcher paper or foil shortens it; waiting it out costs time, not quality.
How long should beef short ribs rest?
15 minutes–1 hour is the conventional window. The long end is not optional for a cut this size: resting lets the juices settle, and finished barbecue holds for hours wrapped in a towel inside a dry cooler.
Where do I put the thermometer in beef short ribs?
In the centre of the meat between bones, without touching bone. Like brisket, short ribs are done when a probe slides in with no resistance.
