Smoked pork loin internal temperature: when it is done

The numbers that matter

Internal temperature milestones for pork loin
MilestoneInternal tempWhat it means
USDA safe minimum145°FSafe, and done
Pull it145–150°FJuicy and safe
Rest9–21 minutesBefore slicing or pulling

Safe minimum from the USDA FSIS Safe Minimum Internal Temperature Chart. The pull window and rest are long-standing barbecue convention, not a published standard, and we present them as that.

Why 145°F is the target

For pork loin, the food-safety number and the finish line are the same number. There is no tough connective tissue waiting to render, so every degree past 145°F costs moisture rather than buying tenderness. That makes an accurate probe more important here than on a brisket, not less.

How to tell it is done

Not a low-and-slow cut. Pull at 145°F and rest — every degree past that costs moisture.

Where to probe. In the centre of the thickest part. Lean cuts like pork loin overshoot quickly, so start checking well before you expect it to be done.

A dome thermometer reads the air under the lid, not the meat. To hit a 5°F window you need a probe in the meat itself — how the budget and premium instant-reads compare.

How long it takes to get there

Common questions

What internal temperature is pork loin done at?
145°F, measured in the thickest part. That is USDA's safe minimum internal temperature, and for pork loin it is also the finish line. Most cooks pull somewhere in the 145–150°F window.
How long should pork loin rest?
9–21 minutes is the conventional window. Rest it loosely tented so the surface does not steam soft.
Where do I put the thermometer in pork loin?
In the centre of the thickest part. Lean cuts like pork loin overshoot quickly, so start checking well before you expect it to be done.
